The sad part about caramel is the ingredients: butter and cream. *sob* I so adore caramel, and now it must be on my "usual suspects" list. Fortunately, not all caramel contains those things, but most do. You need the fat.
On my list to try: caramel corn.
I also took a little time to see how to temper chocolate, and how that differs from melting. Good to know.
