Medieval Fantasy

I finally found what I was looking for. I found out what medieval fantasy is called. I don't mean fantasy set in the middle ages. I mean fantasy stories told during the middle ages about the earlier middle ages.

They are Matter of Britain, Matter of France, and Matter of Rome.

One of the story summaries spoke of someone who subdued a giant and made him carry his stuff; fought the thief who regenerated, so you could never defeat him; and flying on a hippogriff to visit St. Paul, then to the moon to find someone's lost wits.

Who makes this stuff up?
